Air fryer carrots proved me wrong about veggies

I thought carrots in the air fryer would just get limp and boring. My partner tossed them in olive oil and pepper, and they came out crispy and full of flavor. What's a food you were sure would fail in the air fryer but actually worked well?

Honestly, my money was on broccoli turning into sad little twigs. Shockingly, it got all crispy and almost addictive.

Sad little twigs" is exactly what my broccoli usually looks like. I have a true gift for taking a vegetable and making it somehow both soggy and burnt at the same time. You saying it got crispy gives me a little hope, though maybe I used the wrong kind of oil or my oven temperature is a liar. My kitchen failures are mostly my own doing.
