Just realized you can actually make decent fries in an air fryer
I was convinced they'd always be soggy like oven fries, but my friend in Austin swore by soaking the potato sticks in cold water for 30 minutes first. I tried it with russet potatoes and cooked them at 400 degrees, and they came out way crispier than I expected. Has anyone else found a trick that actually works for getting that real fry texture?

Honestly the potato type makes a bigger difference than people say. Russets are good, but I tried it with Yukon Golds once and they were a total fail, way too waxy. You need a starchy potato to get that fluffy inside and crispy outside. I stick with russets now and won't even bother with anything else.

Wait, you soak them in water first? I saw a video where they said to pat the potatoes bone dry with paper towels after you cut them, like really get all the moisture off. The guy said any water left steams them and makes them soft. So I tried that and it did help, but maybe I need to do both... dry them and then also use a little oil spray.
