My sister called my air fryer potatoes 'soggy' and I had to admit she was right
She came over for dinner last week and said my roasted potatoes looked great but felt like they were steamed, not crispy. I was just tossing them in oil and putting them in at 400 for 20 minutes. She told me to try soaking the cut potatoes in cold water for 30 minutes first to pull out the starch, then dry them really well. I tried it yesterday and the difference was huge, they were actually crunchy. Has anyone else found a simple prep step that totally fixed a basic recipe?

Oh man, the water soak is a game changer. I do the same thing with my fries now. That extra starch makes all the difference.

Try adding a little vinegar to the water too.

Wait, you soak your fries in water before cooking them? I tried that once but I think I left them in too long because they got kind of soggy. How long do you let yours soak for? I really want that crispy outside without the inside turning to mush.
