My sister insisted I stop soaking my fries before air frying them, and after a soggy batch last month, I had to admit she was right.
She said the extra moisture just steams them, and now I just pat them dry with a paper towel, toss them in a bit of oil, and they come out way crispier every time, so what other 'must-do' prep steps have you all found you can actually skip?

My uncle used to soak his fries in vinegar before baking them, said it made them crispier. He'd leave them in a bowl for like twenty minutes, kitchen smelled like a chip shop. Always seemed like way too much work for a side dish.
