Update: That job in the old brick building downtown with the plaster walls
Spent four hours trying to fish wire before the homeowner suggested we just run surface mount raceway along the baseboard. Has anyone found a cleaner way to handle those old lath and plaster walls without a huge mess?

My buddy's crew just cuts a clean channel and patches it with mesh and mud now.

My last house had those exact walls. We ended up using a flexible drill bit and fishing from the attic down into the wall cavity. It still makes a mess, but you only need two small holes at the top and bottom. The key is to vacuum as you drill to catch most of the plaster dust. Surface mount is way faster, but if you really want it hidden, that's the method that worked for us without destroying the whole wall.

Flexible bit is the only way to go. Fishing wire beats cutting a giant trench. That mesh patch method always leaves a visible seam later. You get a clean install without the wall looking like a repair job. Worth the extra time to keep the plaster original.
