Showerthought: Comparing my old $15 Walmart kettle to a $80 gooseneck for pour over coffee
I used a cheap old kettle for years and my coffee was fine. Then I got a gooseneck from Fellow for $80 and now my pour over actually extracts evenly and tastes way smoother. But I'm wondering if the difference is really the kettle or just me paying more attention now. Which side do you fall on for kitchen upgrades like this?

Have you tried going back to the old kettle for a week to see if your coffee actually tastes worse now? I think half of these upgrades are just us convincing ourselves we're doing something different so we pay more attention. Like when I got a nice pepper grinder and suddenly my eggs tasted "better" but really I was just seasoning them properly for once. Did you notice a difference right away or was it more gradual?
