PSA: Found out the average Amarillo food truck makes less than $30k a year

I was reading the Amarillo Chamber of Commerce's small business report last night and was shocked to see that most food trucks around here bring in under $30,000 annually. That includes the ones at the Route 66 events and the popular spots on Georgia Street. With permit fees and commissary kitchen rentals eating into that, I wonder how many are actually turning a profit. Has anyone here run a food truck and seen real numbers?

and honestly, after looking into it myself, I'm pretty sure my broke college student meal plan brings in more cash than some of those trucks do in a month. I tried running a hot dog stand one summer and lost $200 because I forgot about the cost of ice and napkins, so I guess that checks out. it's kind of a bummer though because the tacos are so good, you'd think they'd be rolling in it instead of just rolling.
