Okay, I'm going against the grain here, but my instant pot's 'keep warm' function failing right before dinner last night was actually a blessing in disguise.

The thing just shut off after holding my chili for maybe 20 minutes, forcing me to actually taste it and realize I'd forgotten the salt, which everyone says you can't fix after pressure cooking but adding a bit of soy sauce at the end totally saved it.

Ever read that salt doesn't actually cook out in a pressure cooker, it just gets muted? Your story proves that wrong. Forgetting it was a real chance to fix the flavor, and soy sauce was a clever move for that salty-umami punch. I'm with @samb42 on it being a smart save, turning a cooker fail into a win. Makes you wonder how many other "rules" about pressure cooking are just myths, right?

Pressure cookers can be so finicky sometimes. Good save with the soy sauce though, that's a smart trick. At least the mistake led to a better meal.

Actually it was fish sauce, not soy.
