Shoutout to the $300 brisket I dry-rubbed and smoked for 14 hours only to have it come out like shoe leather

Bought a prime packer from a butcher in Portland and followed every YouTube trick I could find, but I think my offset smoker just couldn't hold temp low enough, has anyone else ruined a good cut of meat because their gear wasn't up to the job?

Hear me out @palmer.jana, but yeah I think it kind of is. People spend $300 on way dumber stuff all the time, like concert tickets or a night out. If someone really cares about their brisket technique and they messed up something that took 12 hours, the money is just part of it. It's more about the time and effort, not just the price tag. So yeah, getting worked up over a brisket that cost that much feels pretty normal to me.

My second brisket attempt cost me $250 and 16 hours, and I ended up slicing it with a chainsaw basically. I'm convinced my old brinkmann offset has a 50 degree swing built in, it's a feature not a bug. The bark was so hard I could have used it as a roofing shingle. At least the dog got a free meal out of it, though he looked at me like I'd personally insulted his ancestors.
