PSA: your gas grill thermometer is probably lying to you

Tbh I spent 3 summers flipping burgers on my old Weber and wondering why the middle was always raw. Then I borrowed a $15 oven thermometer from my neighbor in Austin and stuck it next to the built in gauge. It read 80 degrees off at 350. EIGHTY. The lid dial said 350 but the grate was barely at 270. Fixed it by cooking lower and slower, and now I check with a probe every time before I put anything on. Has anyone else checked theirs or are we all just trusting the little needle?

Bet my needle's just there for looks anyway.

Everything's got a thing you can't actually see until you start using it for real. Knives, computers, even those little fidget cubes people carry around. The stuff that matters is almost never the part you notice first, it's how it behaves when you're not looking at it.
