Caught my assistant over-proofing the sourdough repeatedly, and I'm not sure how to stop it.

Sometimes over-proofing can actually be the goal though.

See it with sourdough and relationships sometimes.

Reminds me of this old jar of pickles I forgot in the back of the fridge for a year. They were basically mush, but man, the flavor was wild.
