I always thought sourdough was too much trouble for a home baker

For years I stuck with instant yeast because I heard a starter was a daily chore. Then my friend in Seattle gave me a jar of hers and said just feed it once a week if it's in the fridge. I tried it and my first loaf had a crust and flavor I never got from store yeast. Has anyone else found a simple trick that made sourdough less scary?

That "daily chore" thing kept me away too... I was convinced my starter would die if I looked at it wrong. My first try I forgot it on the counter for a week and it smelled like nail polish remover. I just scraped off the gross top layer, fed what was left, and it bounced back. Turns out they're way harder to kill than people say.

Oh man, that nail polish smell is actually the good yeast... you probably scraped off the hungry part!
