I finally realized I was overmixing my dough for 10 years
It took burning through 3 stand mixers before a guy at the bakery supply place asked how long I mix. I said 8 minutes like a recipe from 2003 told me. He laughed and said stop at 4. Tried it and my bread texture went from bricks to clouds overnight. What finally made you guys change a habit you thought was gospel?
