I visited that old-school bakery in Portland and they still use a paper ledger for their sourdough schedule.
It made me miss when everything wasn't on a screen, but honestly, their loaves are still the best I've ever had, so what's your take on tech in the bakery?

Paper ledgers make better bread, screens just track it.
