My grandma in Tulsa says my sourdough is too sour and honestly I think she's right
My grandma has been baking bread in Tulsa for 50 years and last Sunday she tasted my 3 year old starter loaf and said "this tastes like yogurt, honey" with this little frown. Everybody online tells you more sour equals more skill, but she said her church ladies would have called it spoiled back in the day, and now I can't stop wondering if I've been chasing the wrong thing this whole time. Do you all actually like heavy sour, or did you dial your starter back when somebody honest told you it was too much?
