Shoutout to the customer who told me my sourdough was 'too sour' for a sandwich loaf.
I cut my starter feeding from 12 hours to 8 hours before mixing, and now I'm wondering if a milder flavor is better for daily bread or if I'm losing the character that makes a real sourdough.

Tell them to buy Wonder Bread if they want flavorless bread. You can't please everyone.

Actually, Wonder Bread has its place (like for super picky kids or making certain recipes). Not everyone wants a fancy sourdough that overpowers their sandwich fillings. Sometimes a simple, soft slice is exactly what you need. Calling it flavorless just ignores why a lot of people buy it on purpose.

Had a buddy who swore by Wonder Bread for his grilled cheese... said anything else got too crispy before the cheese melted right.

Exactly. It's the same as people who insist you have to use expensive coffee beans for everything when sometimes a basic cup does the job. Not everything needs to be artisan to be useful.
