Shoutout to the old guy at the supply store who warned me about cheap yeast
I was grabbing supplies for a big sourdough order and a guy next to me said, 'Kid, that bargain yeast will die on you in a week if you don't keep it cold.' I ignored him, left the bag in my warm kitchen for a few days, and my next three batches were flat as pancakes. Cost me a wedding cake order and a ton of wasted flour. Anyone know a good brand that actually lasts?

Ugh, classic. Learned that lesson the hard way too. I just use Fleischmann's now, never lets me down.

My uncle swore by Red Star for years, kept it in his garage fridge next to the fishing bait.

Fleischmann's is solid but I switched to SAF instant yeast about 3 years ago after my third failed batch of croissants. That stuff stays good in the freezer for months without any issues, I keep a brick of it right next to my frozen berries. Took me losing a whole Saturday of baking to learn the cold storage lesson, now I never leave yeast out longer than I have to. Red Star is fine too if you're using it up fast, but SAF has been more forgiving for me when I forget about it for a few weeks.
