Took me three days to figure out why my sourdough was flat
Honestly, I was so sure my starter was fine because it bubbled a bit. Tbh, the problem was my kitchen in Austin was way too cold at night, like 65 degrees. I kept feeding it and waiting for it to double, but it just wouldn't. Ngl, I finally put it in the oven with just the light on and it was ready in six hours. Anyone else have to trick their starter into thinking it's summer?

Yeah, it's a vibe check. If someone's calling your sourdough "tricked out," maybe just smile and nod. Not worth explaining the whole fermentation process over appetizers.
