Unpopular opinion: weighing your flour is worth the $12 scale, and my buddy's grandma proved it
My buddy's grandma has been baking bread in her Fresno kitchen for 40 years and she never owned a scale, just scoops from the same chipped mug every time. I brought my $12 kitchen scale over to her place last month and we weighed her usual scoop, and it came out to 5.6 ounces when a standard cup should be around 4.25. That gap is why my loaves were coming out dense while hers were light, turns out her mug was smaller than a real cup the whole time. I'm not saying ditch your grandma's method if it works, but a cheap scale finally made my dough consistent. Anyone else figure out their recipe was fine and their measuring was the real problem?
