Why did no one tell me to let cookie dough rest in the fridge overnight

I baked flat sad cookies for 10 years until a friend at the farmer's market in Austin said her secret was chilling the dough for 24 hours, and my last batch finally had that thick chewy center I always wanted, so how long do you all actually rest your dough?

24 hours is best but even 2 hours makes a huge difference with any recipe.

Wait, wait, wait. You're telling me 2 hours actually does something noticeable? I always figured you needed like a full day or more for anything to happen. I've got a bunch of cheap balsamic from the grocery store that I usually just dump straight on salad, maybe I should actually try letting it sit for a couple of hours before I use it next time.
