Why does nobody talk about weighing your flour instead of scooping it?
I was making my grandma's biscuit recipe for the third time this month (and getting a different result each time) when my friend, who works at a bakery in Charlotte, casually asked if I was using a scale, and that one question made me realize I'd been packing my measuring cups way too tight for years.

Oh man, I feel so seen right now. My early baking days were a comedy of errors because I treated my measuring cup like a tiny sandcastle mold, just jamming flour in there. I’d get these sad, tough cookies and couldn’t figure out why. A scale changed everything, it’s just so much easier to get it right the first time.

Ugh, tell me about it. I had a plastic one that completely folded in on itself when I poured hot tea. Left a waxy film on everything. Total garbage.
