Appreciation post: my chocolate chip cookies went from flat pancakes to thick and chewy in 3 weeks
For a long time my cookies spread out into one sad sheet on the pan, and I could not figure out why. I was baking them at my mom's place in Phoenix over the holidays and she pointed out I was melting the butter in the microwave instead of letting it soften on the counter. I started pulling the butter out 2 hours ahead, and I also chilled the dough for 30 minutes before scooping. Same recipe, same oven, and the difference was wild. The batch I made Tuesday came out tall with crispy edges and a soft middle. Has anyone else had a small change like that fix a bake you had given up on?
