Had to choose between parchment paper and greasing the pan for my first angel food cake

I was making my first angel food cake last Saturday and got stuck on whether to line the pan with parchment or just grease it. I went with greasing because that's what my grandma always did. Big mistake! The cake stuck like crazy and I ended up with a crumbled mess. Has anyone else learned the hard way that you should never grease an angel food cake pan?

Tbh I actually think parchment paper can be a trap too if you don't grease it properly. Angel food cakes need to cling to the pan walls to rise right, so greasing or lining stops that. I learned this the hard way when my cake collapsed in the center because it had nothing to grip onto.

Oh man, I gotta push back on that a little. I've made plenty of angel food cakes with parchment on the bottom and a light greasing on the sides, and they came out fine with no collapsing. Maybe it's more about your oven temp or how long you let it cool upside down? What method do you usually use for cooling?
