I finally hit my 100th loaf of sourdough and something just clicked
So I've been keeping a little notebook of every loaf I bake - just the date, hydration, and how it turned out. Hit number 100 last Sunday and for the first time I actually got the ear I've been chasing for like two years. Nothing crazy fancy, just a nice crisp curl on the side. Made me realize how much slow practice matters. Anyone else track their bakes in a weird way?

Totally get the notebook thing! I do the same but with my starter - I named him Frank and keep a little log of when he's been fed and how bubbly he is. It's honestly getting weird, but hitting that 100 mark must feel amazing!

And the wild thing is I started doing that with my sourdough too, except I named mine Ignatius and I swear he has moods. Some days he's all bubbly and happy and other days he just sits there looking flat and I'm like "what did I do wrong buddy?" My husband caught me talking to him the other day and now he's convinced I've lost it. But honestly the notebook thing makes total sense to me because I've got a whole spreadsheet going for my starter activity and the amount of bread I've baked.
