I finally see why my mom always said to measure flour by weight

After 6 months of using a $12 kitchen scale for all my bread recipes, I went back to measuring cups for one loaf of banana bread yesterday, and the texture was so dense and flat compared to the fluffy loaves I've been making, has anyone else noticed that big of a difference from just weighing?

My buddy Dave swore by his measuring cups for years, even made his grandma's famous biscuits that way. Last month he finally borrowed my scale for a sourdough loaf after I kept bugging him about it. He texted me two days later, all caps, saying his bread had actual spring in it for the first time ever. The difference was so obvious he threw his cups in the back of the cabinet and ordered his own scale that same night. Honestly, once you see it with your own eyes, there's no going back.
