Just learned the real reason my bread kept collapsing after 6 tries
I was watching a baking stream last night from a guy in Portland and he said most home ovens run 25-50 degrees cooler than what you set them to. I grabbed a $10 oven thermometer from the grocery store and tested mine. Turns out my oven was running 40 degrees cold the whole time. Has anyone else had their oven temp totally mess up their bake?

Yeah that "oven running 40 degrees cold" part really hit home for me. I had the exact same issue with my loaves for months until I grabbed a cheap oven thermometer too. Mine was off by like 30 degrees, and once I started preheating for an extra 15 minutes and adjusting the temp up by 30 degrees, my bread finally started coming out right with a good crust and not collapsing in the middle.
