My buttercream turned into soup because I forgot the kitchen was hot
I was making a birthday cake for my friend and the frosting just would not set up, it kept sliding off the sides. I spent a solid hour trying to chill it, add more sugar, everything. Turns out my apartment was 85 degrees because the AC broke, and I never thought about that. Has anyone else had a baking disaster just because of the room temperature?

My last apartment had a broken AC too, and I just gave up on buttercream for the summer. @gonzalez.vera is right about checking the forecast first.

Ugh, does humidity count as a room temperature thing? I swear, summer baking is a whole different sport. I tried making macarons on a really muggy day once, and the shells just would not dry. They stayed tacky for hours, and then they cracked in the oven. It was a total waste of egg whites and almond flour. I was so mad at the weather. Now I just check the forecast before I even pull out the mixing bowl.

Oh man, that's the worst. It totally counts. I started running a dehumidifier in my kitchen on bad days, just for baking. It's a game changer for stuff like that. @the_jake, you might try that before giving up on buttercream completely. Makes a huge difference with the texture.
