My pie crust was always tough... then I saw my grandma do it

Been baking pies for years and my crust always ended up more like a cracker than flaky... I thought I was kneading it properly. Last Thanksgiving I watched my grandma roll hers out and she barely touched the dough, just patted it together gently until it held. Has anyone else had that moment where you realize you've been overworking dough this whole time?

Oh man, same thing happened to me. I used to beat my dough into submission like it owed me money and wondered why it came out like shoe leather. Then my aunt showed me her trick where she just barely brings the fat and flour together until it looks like peas, adds the water, and then stops. It felt wrong at first, like I was being lazy. But now my crust actually has those nice layers instead of being one solid hockey puck. Funny how less effort gives you better results with pastry, isn't it?

My buddy swore he was cursed with bad pie crust until his kid asked if they could just "smush it less"... turns out he was basically making pasta dough all those years.
