My sourdough starter went from bubbly to dead in 3 days flat

I left it on the counter during that heat wave in Austin and came back to a moldy mess. What temp do you guys keep your starters at during summer?

Man, it's wild how something so simple as a sourdough starter highlights how much our daily routines rely on stable conditions. You think you've got a handle on things, then a few hot days throw everything off.

Put the starter in the fridge next time. Seriously. Cold slows everything down so a hot streak doesn't ruin your timing. I feed mine once a week, pull it out the night before I bake. Also helps to use cooler water when you feed it on those hot days. Like straight from the tap cold. Keeps it from overproofing overnight.
