My sponge cake turned into a pancake this morning

I was making a vanilla sponge cake for my niece's birthday in Austin and forgot to sift the flour. The batter was lumpy and the cake came out flat as a pancake, only about 1 inch tall. I just threw some frosting on it anyway and called it a 'thin layer cake'. Has anyone else salvaged a flat cake with extra filling?

Wait did you use self-rising flour by mistake or just skip sifting altogether? My buddy Dave did something similar last year when he was baking for his kid's school bake sale in Dallas. He threw the whole thing in the trash and started over but that's cause he's a perfectionist weirdo. I wouldve just stacked two of those flat layers with a ton of frosting in between like you did. Honestly sounds like it worked out fine if it tasted good.

Oh you had to bring up self-rising flour didn't you. That's exactly what happened, I grabbed the wrong bag off the shelf and didn't notice until I was staring at two pancakes. Your buddy Dave sounds like he's fun at parties but I'm with you, just pile on the frosting and call it a "deconstructed cake" or something fancy. Tasted fine, nobody complained, and the kids didn't even notice once I covered it in sprinkles.
