Shoutout to my daughter for convincing me to try sourdough starter from scratch. I used to think sourdough was a total pain. All that feeding and discarding just seemed like a waste of flour and time. My daughter brought over some of her starter about three months ago and begged me to give it a shot. She showed me her before and after photos of loaves, and the difference was huge. Her early ones were flat and dense, but after six weeks of consistent feeding, they had these beautiful open crumb structures and tall oven springs. So I finally caved and kept a jar on my counter for two months. That first successful loaf with a crispy crust and tangy flavor completely changed my mind. Has anyone else had a family member drag them into a baking project that surprised them?

Actually sourdough doesn't really need daily feeding once it's mature. Just fridge it.
