Hit 1,000 briskets on my offset, now I see why older guys babied their fires

I always thought keeping the smoke clean meant chasing thin blue, and I ignored stall temps way too long. A retired pitmaster at a comp in Lockhart watched me fight a firebox for three hours, then just said 'let it breathe', and that single phrase shifted my whole approach. Has anyone else had a stranger's tip totally rewrite their cook style?

Hell yeah, that's like someone telling you the secret handshake after you've been doing the awkward wave for years. I had a guy at a gas station watch me choke a brisket with too much wood and he just said "you're cooking smoke, not meat" and walked off. Changed my whole fire game, now I let that thing roll like a lazy river instead of a race car.
