Huh, I gotta say I was in the same boat. I always figured wood was wood, you know? Then my cousin brought over some applewood smoked ribs last summer and I almost fell out of my chair. The difference in flavor was like night and day, I couldn't believe how much sweeter and more subtle it was compared to the hickory I'd been using.

Yeah, "night and day" is a good way to put it. I had the same reaction when my neighbor @margaret234 let me try some peachwood smoked chicken. Totally changed how I look at smoking. What kind of setup were you using when you made that switch? I'm curious if it matters more with a certain type of smoker or if it's pretty universal.
