Just picked up a used offset smoker from a guy in Austin

I had to choose between a smaller new one or a big old one that needed some work. Went with the old one, a 48 inch model from 2015. Spent the last two weekends cleaning it up and sealing some leaks with high heat gasket. Fired it up yesterday for a test run with some pork shoulder. It held temp way better than I thought it would after the fixes. What's the first thing you guys would cook on a new-to-you smoker?

Yeah, but @finley_craig53 is right about pork shoulder being forgiving.

A pork shoulder is actually a great first cook. It's forgiving if your temp control isn't perfect yet. You already picked the right test.

Remember when everyone used to freak out about getting the perfect smoke ring? My first shoulder looked like a meteorite but fell apart like a dream. Texture over looks any day.
