My brisket stalled at 152F for 4 hours at the Elk Grove contest and I panicked and wrapped it way too early
I was 6th in line for turn-in with a brisket that was still tough as a boot heel, so I double wrapped it in foil at 4am, bumped the heat to 300, and it came out tasting like a pot roast instead of BBQ, which killed my score and taught me to just ride out the stall with patience and a cold beer instead.
