My mind blown moment at the Memphis in May BBQ contest last year
I was walking around the pits during a slow spell and a guy from a competing team told me that the average brisket loses nearly 40 percent of its weight during a 12 hour smoke. I thought he was joking or trying to mess with me, but I looked it up on my phone right there. The water and fat just drip away over time. I always figured it was like 20 percent tops. Made me rethink how much meat to buy for a party now. Has anyone else gotten a shock from those kind of stats at a comp?

You ever buy a brisket and wake up weighing 40 percent less than you started?
