My smoker almost ruined a 40 pound brisket order for a wedding in Dallas
Was catering my cousin's wedding last month. The firebox door on my offset smoker warped overnight. Temp dropped to 180. Panicked. Wrapped the brisket in foil, cranked the charcoal chimney, and shoved it right into the main chamber to get heat back fast. It worked, but man, that was a close one. Anyone else ever have a smoker fail on a big, important cook?

That foil wrap probably saved the whole cook.

Nah, I've had way better bark when I skip the wrap entirely.

My old pellet grill's controller died right before a big family reunion! I had to finish three pork butts in the kitchen oven. Always have a backup plan now.
