Pro tip: that $20 smoker thermometer I swore by for years was way off
I used a cheap dial thermometer on my offset for 5 years until a buddy brought over his Thermoworks and showed me my grate temp was 60 degrees lower than what I was reading. Took me one brisket cooked at the right temp to never look back. Anyone else have a tool they thought was fine until they tried something better?

My first brisket after getting a real thermometer tasted so good I almost cried. Pretty sure I'd been serving charcoal flavored disappointment for years.

Bought one of those cheap laser gun things thinking I was being clever. Turned out it was only reading surface temps on my grate, not the actual air temp inside. Once I stuck a probe in there with a proper wired thermometer, everything changed. My ribs went from inconsistent to competition quality almost overnight. Felt like an idiot for trusting that little laser for two full seasons. What was the biggest eye opener for you after you switched?
