PSA: dropped $240 on a wireless meat probe set for my offset smoker and it was the worst bbq money I ever spent
So last month I finally caved and bought one of those fancy 4 probe wireless thermometer kits for my offset stick burner. Cost me $240 after tax at the shop over in Waco. I figured it would let me stop babysitting the fire every 20 minutes during a 14 hour brisket cook. First cook went fine until hour 6 when the ambient probe started reading 40 degrees hotter than my dial gauge that I have trusted for 9 cooks. Turns out the little probe clip was sliding around on the grate and picking up direct heat from the coal bed. Then the app kept dropping the signal every time I walked inside to grab a beer. I ended up sitting outside in the rain at 2am watching my old $18 analog dial anyway while the app said everything was perfect. The brisket came out dry on the flat because I trusted the probe over my own eyes and feel. Save your money and learn to read your pit instead, or at least buy the cheap wired kind that just works. Has anybody found a wireless setup that actually holds a signal through a tin roof shed?
Man that part about sitting outside in the rain at 2am watching your old 18 dollar dial while the app says everything is perfect really hit me. I feel for you big time, dropping that kind of cash and then still babysitting the fire the old way is a kick in the teeth. Honestly the probe clip sliding on the grate is the classic trap, it grabs heat straight off the coals and lies to your face the whole cook. Trusting a reading over your own eyes on that flat is a hard lesson but you already know your pit better than any gadget will. As for the tin roof problem, that metal blocks a lot of the signal and no fancy set is gonna fix that, folks I know run the base unit outside near the smoker and just watch the numbers through a window. Save that 240 and put it toward meat, your dial has never let you down.
