Question about the 'bark' on my brisket never setting right

I realized my mistake after a guy at a competition in Austin pointed out I was wrapping my brisket way too early, basically steaming off the bark I'd worked for hours to build.

Nancyhernandez just described my dad to a T. That steam is a bark killer for sure.

Remember watching my dad wrap his brisket in pink butcher paper the second it hit the stall. He’d get so mad when the bark turned soft, like he forgot that paper traps steam.
