Serious question, has anyone else had a grease fire flare up right before a competition turn-in?
Last summer at the Kansas City Royal, my pork butt drippings hit a hot spot in the firebox and sent a 3-foot flame up through the smoke stack just as I was about to box my entry, so I had to douse it with my spray bottle and hope the judges didn't notice the slight char on the bark.

Had a similar thing happen once. Honestly, that spray bottle move is a huge risk. You can trap steam and make the meat soggy. Better to just close all the vents and choke the fire out fast. A little lost time is better than a wet box. Judges can spot that a mile away.

Wet box" is a phrase that changed my whole game.

So how do you even fix a wet box once it happens?
