I realized I'd been idolizing the TV personalities, but the real skill is in the quiet, consistent work, not just the flashy turn-ins. It made me think about the guy who runs the pop-up tent in our town's parking lot every Friday, who has been doing it for 15 years without a single TV spot. His brisket is always perfect. Are we maybe putting too much focus on the competition circuit and not enough on the local legends who just feed people?
