Unpopular opinion: I was dead wrong about pellet grills for competition
Used to swear by my offset smoker for everything, but after running a 12-hour cook on a buddy's Recteq last Saturday, I'm convinced the consistency is legit - my pork shoulder came out with a better bark than anything I've done on wood. Has anyone else switched methods after thinking they knew better and had it work out?

The "better bark than anything I've done on wood" part got me thinking. Last summer I ran a camp stove for brisket after my propane tank ran out and the neighbors lent me their Coleman. Turned out fine but I still tell people it was intentional.

Nah man, fire is fire and bark is bark. If the temp holds steady and the smoke's right, doesn't matter if it came from a camp stove or a offset.
