Warning: My $400 pellet grill almost cost me a competition
I bought it thinking it would make things easier for a small contest in Austin, but the temp swings were wild and I nearly dried out a whole pork butt. What do you guys do to keep pellet grills steady when it really counts?

Elizabeth_ramirez is onto something with the blanket trick. My old grill would freak out every time a cloud passed by. I started putting a welding blanket over the top during long cooks, and it was like a different machine. The temp stopped jumping around so much. It saved a rack of ribs last summer when the weather turned weird.

Oh man, that's a familiar kind of panic. My cheap grill once tried to turn brisket into a hockey puck right before friends came over. A thermal blanket wrapped around the drum made a huge difference for me in the wind. It's not a perfect fix but it really helped even things out.
