Bake-off showdown: parchment paper crushes foil for sheet pan dinners
I did a side by side test last Saturday with two identical trays of chicken and veggies. The foil one stuck bad in the corners and took 10 minutes to scrub after. The parchment one slid right into the trash, zero residue on the pan. I used the same oven, same temp at 425, same marinade, so it was a fair fight. Even the cleanup on the parchment tray was just a quick rinse, no soaking needed. Has anyone else ditched foil for parchment on weeknight bakes, or am I late to this party?

Wait till you try baking paper on the underside of a whole fish or a sticky teriyaki salmon fillet. Foil rips and leaves those little silver shards embedded in the skin, totally gross. Parchment just peels off clean and you can even use it to tent the fish while it rests. Also, pro move if you buy the unbleached kind, you can compost it after if it's not too greasy. That's the part that sold me, no shiny landfill guilt.
