Burned garlic every time until a chef at a diner in Pittsburgh told me this trick
I was at this little diner in Pittsburgh last spring and the cook saw me burning garlic in a pan. He said to toss the garlic in cold oil first and then heat it up together. Now I never burn it and I don't have to scrub pans as much. Has anyone else tried this method or got another tip for keeping garlic from turning bitter?

Wait, does this trick involve the thing with the back of a knife and some salt? Because I tried that once and ended up with a kitchen counter that looked like a crime scene, plus my eggs were still somehow bland. I swear, every time a line cook gives me advice my brain turns it into something that would get me banned from a commercial kitchen. But hey, at least my smoke alarm gets a good workout, right?
