My abuela in El Paso watched me dump pasta water down the sink and grabbed my wrist
She said the starchy water is free thickener for the sauce and now I save a mug of it before draining, takes 5 seconds and the sauce actually sticks. Anyone else got a grandma trick that sounded weird until you tried it?
Ok so the pasta water thing is real but the reason matters and most people get it wrong. It's not just that it's starchy, it's the salt in it too, and the fact that the starch helps the oil and water in your sauce mix together instead of splitting. That's why you gotta salt your pasta water heavy if you plan on saving some, otherwise you're just adding bland water to your sauce. Also you don't need a whole mug, like a half cup is plenty for most sauces. Too much and you end up with soup instead of sauce. My nana did the same thing with rice water for her beans and I thought she was nuts until I tasted the difference.
