Pro tip: stop rinsing your pasta in cold water, I ruined 2 years of spaghetti before my aunt caught me
My aunt from Naples watched me dump my cooked spaghetti into a colander and run it under cold tap and she literally grabbed my wrist. She said the starch on the outside is what makes the sauce stick and I was washing off the only thing holding the whole dish together. I had been doing this since I moved into my first apartment in 2022 because I thought it stopped the noodles from getting gummy. Now I just pull it 60 seconds early and finish it in the pan with a splash of the boiling water, and the difference is not small. Anyone else grow up being taught to rinse, or was that just my family?
