Question about the 3 second rule, a cook at my diner said food dropped on the floor is safe for 30 seconds not 3
He told me this last Tuesday while I was helping prep at the diner off Route 9, and now I'm wondering if anyone else has heard a different number for how long dropped food stays safe to eat.
Thirty seconds is actually more believable than the 3 second thing if you look at how bacteria work. Germs don't run on a stopwatch and decide to jump on your food at second four. The real issue is moisture and how dirty the floor is, not the clock. A dry cracker on a dry tile for 30 seconds probably picks up less than a wet piece of chicken on a wet floor for 1 second. The whole rule is made up either way, so arguing about 3 versus 30 is like arguing about how many angels fit on a pin.
