Rant: That expensive chef's knife was a total waste for me

I dropped $180 on a high-end Japanese knife everyone raves about online. After 6 months, I honestly prefer my old $30 Victorinox. The fancy one chips if you look at it wrong, and I'm scared to use it on anything harder than a tomato. My cheap knife takes a beating and still cuts fine. Anyone else regret buying into the hype on kitchen gear?

Oh, I heard a pro chef say the same thing on a podcast once.

The Victorinox is the real deal because it's made for work, not for looking pretty on a magnetic strip. That expensive Japanese knife is basically a glass slipper - beautiful but totally impractical for everyday use. I've seen so many home cooks buy fancy knives and then baby them to death. Get yourself a decent steel and just use the hell out of it, that's what actually matters.
